Another quick fix meal ! Using instant curry paste, add chicken, potatoes and coconut milk in accordance to the instructions on the packaging. Instant curry paste can be bought from any supermarkets. It’s fast and easy and you can get good chicken curry simmering in less than half an hour. Perfect for people like us who do not have time to cook after a day’s work ! To enhance favour, curry leaves, lemon grass, a dash of ginger, garlic and onion powder can be added. These spices can be purchased in their ready powder form at any spices store ~ saves time on pounding these veges !

 

 

[Recipe] Mango Muffins – Eat What Tonight

There are some super ripe mangoes in the fridge today. So here come some mango muffins ! This is my first time baking fresh mangoes in the oven ! Most of the times, mangoes are used to make mango mousse or pudding or some kind of sweet dessert. Surprisingly, they turn out to taste pretty nice ! Muffins were moist and sweet due to the sweetness from the mangoes. Even when the muffins were in the baking process, the aroma from the muffins were so pungent that the whole house was filled with the great smell.

 

Recipe adapted from <Easy Muffins and Cupcakes> by Kevin Chai

 

Ingredients :

200g mango fresh, diced

120ml milk

170g unsalted butter

180g sugar

2 eggs, beaten

120ml mango puree

240g plain flour

2 tsp baking powder

60g ground almond

Method :

1. Bring mango and milk to boil for a while. Remove and leave to cool.

2. Preheat oven to 190 degrees C. Grease muffin tin or line muffin tin with paper cup.

3. Melt the butter over low heat. Remove from heat, stir in sugar, eggs, mango puree and cooled mango with milk.

4. Sift flour and baking powder. Fold into egg mixture together with ground almond.

5. Spoon the batter into the prepared tin. Bake for 25 minutes or until cooled.

6. Remove tin from the oven and cool for 5 minutes. Then remove the muffins and cool on a rack.

Tropical Chiffon Cake – Eat What Tonight
 I seem to be crazy about chiffon cake recently. Haha ! Try out a new favour today. A tropical taste of coconut and pineapple with a twinge of coffee.
 

Recipe adapted from <Chiffon Cake is Done> by Kevin Chai


Ingredients :

Coconut Egg Yolk Batter
3 egg yolks
2 tbsp cooking oil
60ml coconut milk
30g sugar
90g self-raising flour


Pineapple Egg Yolk Batter
3 egg yolks
2 tbsp cooking oil
60ml coconut milk
1 tsp instant coffee powder
1 tsp water
100g canned pineapple (pureed)
20g glaced cherries (chopped)
30g sugar
90g self-raising flour


Egg White Foam
6 egg whites
1/2 tsp cream of tartar
100g sugar

Method :

1. To make coconut egg yolk batter, combine egg yolks, cooking oil, coconut milk and sugar in a mixing bowl. Fold in flour until forms batter. Leave aside.

2. To make pineapple egg yolk batter, melt coffee powder with water in a mixing bowl, then combine with the remaining ingredients until forms batter. Leave aside.

3. To make egg white foam, beat egg whites and cream of tartar until mixture forms soft peaks. Gradually add in sugar, beating at high speed until frothy and stiff peaks form.

4. Gently fold half of beaten egg white foam into coconut egg yolk batter until blended. Pour batter into ungreased 9-inch (22cm) tube pan. Bake in preheated oven at 170 degrees C for 15 minutes.

5. Meanwhile, fold another half of beaten egg white foam into pineapple egg yolk batter gently. Pour batter over half baked coconut batter. Bake for another 25-30 minutes or until cooked.

6. Remove from oven, invert cake onto table until completely cooled.

Used the leftover oranges from last week bakes, mangoes and pineapples from today’s bakes, combine all three fruits with two cups of ice cubes and blend them into orange mango pineapple smoothie ! Nothing is wasted !

Milo Marbled Cake – Eat What Tonight

This is an old bake sometime ago. Forget to post it up though. It’s actually a standard marbled cake. But my sister suggested a milo cake so I decided to replace the chocolate portion in the cake with milo powder instead. How much milo powder required depends on how ‘miloey’ you want it to be ! 

 

 

Recipe Modified from <I Love Butter Cake> by Kevin Chai

 

Ingredients :

300g butter

200g sugar

4 eggs

200g plain flour

1/2 tsp baking powder

20g milo powder
(for a more miloey taste, increase milo powder and decrease plain flour by same amount)

Method :
1. Grease and line a 20cm (8-inch) baking tin. Preheat oven to 180 degrees C.
2. Beat butter and sugar until light and fluffy. Add in eggs, one at a time, beating thoroughly after each addition.
3. Fold in sifted flour and baking powder to form a batter. Reserve 200g batter mix with milo powder to form milo batter.
4. Spread batters alternately into prepared tin.
5. Bake for 40 minutes or until cooked.

Quick Fix Meal – Steamed Egg with Minced Meat – Eat What Tonight

I am back to cooking dinner again ! As usual, I am always in search of quick fix meals because by the time we got back home from work, we can only prepare “fast food” so that our dinner does not become our supper ! Egg is a fast prepared meal but aside from the usual scrambled egg, steamed egg is a more healthy version and can be prepared in 15 minutes.

 

 

Own Recipe

Ingredients :

2 eggs

150-200g minced meat

(seasoned with 1 tbsp of pepper, 1 tbsp of light soy sauce, some ginger powder and onion powder)

Method :
1. Measure double amount of the volume of water as compared to the eggs and set aside. Ratio of eggs to water is 1:2.
2. Add in 1 tbsp of light soy sauce and 1 tbsp of pepper to the eggs. Add the water and beat well.
3. Combine and eggs and water together and pour in through a siever.
4. Place the minced meat in a plate and pour the egg mixture over.
5. Steamed for 15-20 minutes or until cooked.

Although home-made soups does not belong to quick fix catergory, but with the creation of many effective home appliaces, tasty home-made soups can still be made available for busy working class people. Before I bought the slow cooker, I never had the chance to prepare any home-made soups. As we all know the longer soup is being simmered, the tastier it becomes. If I start to  simmer the soup after I come back from work, by the time we manage to enjoy the meal, it would have become our late supper. Now with the slow cooker, all I need to do is to pour all the ingredients (prepared a day earlier) into the cooker in the morning before I proceed to work, and by the time I come back from work, there’s a great home-made simmering soup before mine eyes ! 

 

Health Tip : Watercress is abundant in vitamins A and C. An excellent source of iron and is believed to be effective in reducing phlegm.

Ingredients :

150g watercress

100-150g pork ribs

3 red dates (optional)

1 litre water

 

Seasoning

1 tsp salt

1 tbsp pepper

Method :

1. Clean and drain the pork ribs. Wash the red dates.

2. Add the pork ribs, red dates and watercress with the water into a slow cooker and let it simmer for 2 hours or more. Add the seasoning 15 minutes before serving.

There’s nothing special about this dish. Rather, it’s quite a no-brainer. Just stir fried some garlic, add in the prawns and mushrooms, followed by the vege and seasoning and fried till cooked. But just to mention how such a vege dish, an egg and a soup can be made ready for a 2 persons’ dinner in less than an hour. Also, I love all kinds of veges that are “baby”. I think they tend to taste better than full grown veges ? 🙂 Nevertheless, a quick and fuss-free home cooked meal is definitely healthier than any food bought from outside !

Surfers Paradise @ Gold Coast ~ Day I – Eat What Tonight

These are the views from hotel room at Gold Coast. Most of the people will know the hotel as Courtyard Mariott. We were surprised when the driver drop us at this hotel, only to know later that it has been recently renamed to Hotel Grand Chancellor.

Ok, how should I rate this ? Basically, it’s very salty ! Not too much of my liking. I realised food in Gold Coast tastes more salty than any other parts of Aussie.

Even the seafood pasta is salty ! Gosh, they do eat alot of salt !

Home-Made Tiramisu

Only this is nice ! The most enjoyable part of the meal. 

 

But this cafe though looks ordinary, doesn’t come cheap. For just 3 dishes above, it costs a whopping A$60+. IMO, the $ is not well-spent !

At a vietnamese cafe known as Vietnamese Fine Foods, at the middle of Elkhorn Ave & end of Orchid Ave, we had…

 

Fish N Chips

Extremely SALTY ! Look closely at the picture, you can see the amount of salt sprinkled on the fries and even the fish ! But it’s probably the cheapest cafe you can find along Gold Coast.

Dreamworld & Whitewater World @ Gold Coast ~ Day II – Eat What Tonight

Started the day with breakfast at the hotel…

 

 

Seems quite alright for the first breakfast in Gold Coast, but imagine if you were to have this every morning for the next 5 days, then hmmm…. I still prefer Singapore’s breakfast menu ! 🙂

 

 

1st themepark of the trip ~

Thrilling Rides ~~

 

 

I did not attempt this ! But HB did. He said it’s not as fast as he imagined…

Can’t remember what is this. But don’t think it’s opened for rides.
 

 

Ok I remember this very clearly. It’s the entrance to the Tower of Terror II. The most terrifying game of all the themeparks and probably in the world as the brochure states… It travelled at 171km/hr for 7 seconds BACKWARDS !

 

 

Tower of Terror II. The carts come out from the left hand side, from darkness to brightness on a backwards basis. So unprepared for that coz everyone thought it’s gonna sweep forward. 

 

I did not attempt this as well. It’s basically a roller coaster while sitting in a motorbike position. 

 

I think this is something like the pirates ship. Where you go mid air and they swing you round and round.

 

This gets you wet !… riding on a boat and going down a slope…    

On a side note ~ although the temperature was 26-27 degerees C today but it felt like Singapore when it is more than 30 degrees C. We assume no sunblock was needed but was very wrong. Got sunburnt at this temperature. The UV rays in Aussie is no joke. So I wasn’t really keen on most of the rides because of the hot weather.

Known as the Ibis. It can be found even on the streets. Mostly loitter around food places. Sounds like a pest ? But it’s a protected animal in aussie.

It’s a python. Looks so slimy and grossed !

Don’t know where this creature pops out from. It actually appeared in one of the outdoor sitting cafes.

The tigers here can climb trees ! But did not manage to capture any shots of that coz it’s too fast. Maybe I “mountain tortoise”, but I really never seen tigers up on trees before so it’s a big deal ! ^-^

WhiteWater World
 This place is very much liked the swimming complex in Jurong West, Singapore.

 
 

Dreamworld and Whitewater Worlds are just beside each other. The characters theme are Sponge Bob. Hmm.. Not my favourite. Don’t find the characters in Sponge Bob cute.

 
 

What’s that hairy-chest man doing in my picture ??!!??

 

 This place is packed with much more people than Dreamworld. However, due to my toe injury, I did not attempt any of the water games. Weather was extremely hot that day, at least to me, so it wasn’t really enjoyable. ^-^

To make things worse, the transport service made a mistake and failed to pick us up when the themeparks close. We had to make our own way back to the hotel ourselves. Made a complaint and they compensate us with free return transfers for our next theme park visit. 

Ended the day with a Late Dinner at Jupiters Casino…

Seafood Platter @ A$15… by the way, casino membership is free… So a real good bargain…The seafood are fresh and good…and we also ordered the…

Overall, great food, great prices and you can go into the casino without any levy. Heeehee. 😛
